I want a bike that will be with for more than a couple of years and won't get boring.
I have very little experience riding street bikes.
I'm 6'1 with a 34in inseam.

My husband is sitting here with me so I'm giving you his advise. He says a 250F is a better choice for you because it's a 4 stroke and it's a good overall bike for a beginner. The 250R is a 2 stroke and not a great choice for someone just starting out.
He's been riding for about 25 years.

Your question is vague at best. For dirtbike the 250F is a great bike vs the 250R for the reasons that were given in one of these answers. If you are talking street, then you need to go try them out for fit and comfort. What are you riding now? I find it almost impossible to fit you by typing to you. Go to your local stores and do a couple of test rides. I ride Ninja, you may not be feeling that and trying is the best way.

I am 5'7 and the while '08 Ninja 250 is a gorgeous, re-worked bike, it might be a little short for a 6'1 person. The 500 is a little taller, while the 650R is even taller with a slightly upright position.
All of the Kawasaki dealerships I've visited suggested the 250 would be outgrown quickly. They've also predicted it would be the hottest Kawasaki seller once released.
If you're looking to have something that challenges you, look at the 500 or 650R. (The 500 still looks dated to me)
