What kind of problems can occur when you drive a 2007 Honda Civic over a very
high curb? The car seems to have a slight vibration/jerkiness since it was driven over the curb. However, it is not out of alignment.

you probably broke a steel belt in the tire. it will eventually get worse if you did. this gives the tire enough of a bump on the tread that you can feel it while you are driving.

If the car's alignment is ok then what you may have done is damaged the wheel balance. Have the car's wheels and tires looked at for balance.
