Odd behavior

Well my car got to not running right so I though a leaky intake gasket was to blame stripped it down and put it all back ran the same so I'm just messing with stuff under the hood and unplug my maf and snap the throttle open ran good no pop or hesitation so I drove it for bout an hour and still ran good. So my question is this ........ why the hell is my car even running without the maf plugged I had a 300zx the wouldnt go past 1500 without it
