We'll be finishing up the passenger seat tomorrow afternoon. I'm not sure when the driver's seat will be done. Perhaps in the next day or two.

The passenger seat is done and installed now. We'll be finishing the driver's seat tomorrow and then the interior will be considered done (for now.)

only complaint I have with it is the plastic parts now look out of place, is that the next project?

If you're talking about the gray plastic such as the center console, rear sails, A-pillar trim, dash, rear plastic trim, door panels, etc, then nope, not doing anything to that. These seats were white before, the only thing that's really different is the orange houndstooth inserts. That's just way too much plastic to start either swapping to black (if I could even find them all in black) or to paint black (which would eventually chip away.) I'm just not going to go through all that trouble. And I couldn't really do a few pieces, because then it'd really look bad...which is not to insinuate that I think the gray stuff looks bad now.

Yes, the old seats were pretty bad. I really hate perforated leather. It's just a bad seat waiting to happen. You can see from this first picture just how bad they've gotten since I bought the car. I took this picture one of the first days I got it home:

3 years later:

Each of those holes is a weak point that breaks down each time you sit in the car. Eventually the leather gets so weak that it tears. I wasn't going to have that again. And mind you, that seat (specifically the bolster) got worse even with me being very mindful of how I got in and out of the car. There's just no way around it.

I agree with you, when I redid my seats in some nice leather I made sure not to get perforated leather.
